Independent Health "Healthy" Tailgating Recipes Winner. Click For A Healthy Buffalo Chicken Salad!

This weeks Independent Health's "Healthy Tailgating Recipe" winner is Joann Montes from Cheektowaga. This recipe has all the flavor of chicken wings packed into an irresistible, healthy salad! But unlike chicken wings, you can eat a big serving of this healthy Buffalo Chicken Salad! 

Buffalo Chicken Salad

2 nice size skinless boneless chicken breast
1 cup frozen corn cooked
1/4 cup red and green pepper each
1 cup cooked brown rice
1/2 cup of shredded low fat monetary jack cheese
1 jar of mild anchor bar chicken wing sauce
1 pack of hidden valley ranch season

Simmer chicken in 1/4 cup low sodium chicken broth until cooked. Drain and cut into small chunks  add 1/4 cup anchor bar mild sauce and simmer for 5 mins sprinkle with 1/2 pack of  Ranch seasoning mix  (reserve other half of the pack) set aside.

Cook the rice.When its done add cooked corn. Chop the red and green peppers. (A processor works best) add this to the rice and corn mixture.

*In a big bowl gently fold in the rice and corn and pepper mixture with chicken and sauce. sprinkle again with reserved ranch season and monetary jack cheese Mix well. Serve in dixie cups and enjoy !
