This delicious, healthy and filling chili is a great alternative to traditional meat chili and features lots of sweet potatoes, veggies and beans, so it’s sure to be a hit at your last Tailgating Party of the regular season!”
Sweet potato veggie chili
Sweet potato. 3 or more. Peel and cube
Beans- black and pinto 1 can each. Can use red or kidney beans.
Peppers red green yellow
Crushed tomatoes- 1 28 oz can fire roasted
Corn 1 can
Onion whole red
Garlic 2-3 cloves chopped
Green chili - can in Mexican section
Cumin
Chili powder
Cayenne pepper
Onion plus powder
Garlic plus powder to taste on spices
Cook 8 hours on low in crockpot
To serve: Top with sour cream (optional), Avocado, and shredded cheddar cheese. Serve with lime tortilla chips if desired. HMMMMMH!
